Day 9: April 28th
I flew to Albuquerque, New Mexico today! We left at 5:30 AM and arrived at 9:30 AM- which meant we had the entire day to explore the city! For breakfast I had cheese and peanut butter crackers and Diet Pepsi at the Denver Airport. For lunch I had these AWESOME blue corn tortilla enchiladas with a local brew.
For dinner I had a glass of white wine at the Sandia Tram. My lunch was so filling and good I wasn’t even hungry. The view from Sandia Peak was amazing. You can see the entire city on top of the mountain at 10,000+ feet. We stayed at the Sandia Resort and Casino which was the fanciest resort I’ve every stayed at. After a full day of running around I was excited to relax in a hot bath.
Day 10: April 29th…MY BIRTHDAY!!!!!!
I talked to Aunt Karol and Brooke while enjoying a cup of hot coffee in the room. We had the training/ meeting from 8-5PM this day. It was an intense day of gaining knowledge. For breakfast I had a made-to-order omelet and croissant (and more coffee of course!). For lunch they served us a delicious buffet and I had an enchilada, pasta salad, green salad, veggies and churro 🙂
To celebrate my birthday, my friend and I ate at the restaurant in the casino on the top floor so we could look at the view (golf course, mountain, spa, etc.). I went all out and had a pomegranate margarita and then a Sandia Margarita (pictured below). Christen and I shared caprese flatbread and creme brulee for dessert. All SO good! We took a nice walk around the resort to get some fresh air. We did a little gambling- I won $4!- and then we were ready for bed. Overall, I had a great birthday!
Day 11: April 30th
For breakfast I had another omelet and croissant. For lunch I had Red Pepper Bisque (which I want to make someday), a turkey sandwich and green salad. Our meeting and lunch went until 1 PM. We relaxed by the pool, read and drank coffee at the resort until we had to go to the airport. The rest of the day was pretty uneventful as we made our way back to Devils Lake, North Dakota.
A little bit about the training/meeting. Casey Family Foundation paid for social workers, child welfare workers, supervisors, directors, etc. to fly to New Mexico. The goal of the meeting is for teams to come up with recruitment and retention plans for foster parents for Native American youth. There were teams from Alaska, Oklahoma and North Dakota. Our team’s main goal is to support Spirit Lake’s Tribal Social Services Agency and find homes for our Native American foster care youth. It was very helpful and interesting to talk to social workers from around the country to see how they do things.
Day 12: May Day
Back in the office and back to the grind! For breakfast I had two small pieces of breakfast pizza and coffee. For lunch I had a cheeseburger. For dinner I had Spicy Sausage Pasta. Today was pretty uneventful compared to the previous days this week. My diet was awful today! Back to serious gym workouts and healthy eating tomorrow.
